Gluten Free Pancake Recipe
One of our most favourite family meals is pancakes, or crepes, and since I stopped eating flour in 2020 I have really missed my crepes.
A few years ago I saw a recipe online for 'chaffles' (cheesy waffles) so I gave it a go and realised that the mixture was perfect for pancakes, admittedly American style pancakes and not crepes, but beggars can't be choosers.
Over the years I have refined it so it's super easy to make and it doesn't taste cheesy in the slightest.
Each portion makes one pancake.
INGREDIENTS:
One heaped tablespoon of almond flour/ground almonds
One egg
One heaped tablespoon of cream cheese
One heaped tablespoon of grated mozzarella or mild cheddar cheese
That's all!
Simply mix together and cook in a pan, using butter.
Here's a list of my favourite toppings (and before you cry: 'where's the lemon and sugar!' I never really liked that combo even when I did eat sugar)
Fried egg and bacon
Spinach, mushroom and garlic
Cheese and ham
Peanut butter and banana
